Recipe for flax seed bread with malt

Recipe for flax seed bread: ingredients list

200 grams of wheat flour
50 grams of whole wheat flour
100 grams of flax seeds
2 teaspoons malt powder
1 teaspoon salt
1 teaspoon instant yeast
150 grams water
Oil for greasing the bowl

Recipe for flax seed bread: preparation

  1. Mix wheat flour, whole wheat flour, flax seeds, malt, salt, and instant yeast in a bowl.
  2. Stir in the water and mix until it turns into dough. This flax seed bread dough should be quite dry; if it is very sticky you should add some more flour.
  3. Knead the dough somewhat, but don’t over do it. Since we use plenty of whole wheat and seeds in this flax seed bread, a high degree of gluten development cannot occur. Kneading it a lot is therefore pointless.
  4. Shape the flax seed bread dough into a ball and place it in a greased bowl.  
  5. Cover the bowl and leave the dough to rise for 60-90 minutes.
  6. Divide the dough into two parts and create two loaves.
  7. Cover the loaves and leave them to rise for another 60 minutes.
  8. Preheat the oven to 425 degrees F.
  9. Use a brush to gently coat the top of the flax seed bread with water.
  10. Score the flax seed bread.
  11. Place the flax seed bread in the preheated oven.
  12. Bake until ready; this will normally take around 40-50 minutes. (If you have a bread thermometer, you can remove the flax seed bread when the centres of the loaves are 205 degrees F.)

If you have trouble finding malt, you can use some other type of sweetener. Adding some type of sugar to the dough is important, because the yeast feed on sugar. When the flax seed bread is ready, most of the sugar will actually have been consumed by the yeast so you do not have to worry about the calories if you stick to a reasonable amount of sweetener. Brown sugar, molasses and honey are all nice supplements for malt.
