Flax Seed Muffin Recipe
Flax seed muffin recipe with apples
Flax seed muffin recipe ingredients
- Oil or margarine for greasing the muffin tin
- ½ cup of pecans
- 1 ¼ cup of flax seed meal
- ¾ cup of sugar (or artificial sweetener equal to ¾ cup sugar)
- 1 tablespoon of cinnamon
- 1 tablespoon of vanilla
- 2 teaspoons baking powder
- 1 teaspoon of nutmeg
- ½ teaspoon of salt
- 2 apples (not too big)
- 4 large eggs
- ½ cup flavored syrup (or water if you want a less sugary flax seed muffin recipe)
- ¼ cup of sunflower oil
Flax seed muffin recipe instructions
- Grease your muffin tin. This recipe yields 12 muffins.
- Chop the pecans.
- Mix the pecans with flax seed meal, sugar, cinnamon, vanilla, baking powder, nutmeg and salt.
- Chop the apples into small pieces.
- Beat the eggs.
- Mix the eggs with the dry ingredients and stir in syrup and sunflower oil.
- Add the apple pieces.
- Leave the flax seed muffin batter to stand for 10 minutes while you preheat the oven to 350 degrees F.
- Place the batter in the greased muffin tin and bake them until they done. This will normally take 18-20 minutes. The flax seed muffins are ready when a toothpick comes out clean from the centre of a muffin.

- Oil or margarine for greasing the muffin tin
- 1 cup of wheat flour
- 1 cup of wheat bran
- 1 cup of flax seed
- ½ cup of oat bran
- 1 tablespoon of baking powder
- ½ teaspoon of salt
- 2 oranges
- 1 cup of milk
- 1 cup of brown sugar
- ½ cup of canola oil
- 2 eggs
- 1 teaspoon of baking soda
- 1 cup of raisins

- Preheat the oven to 375 degrees F.
- Grease your muffin tin. This recipe yields 12 muffins.
- Mix wheat flour, wheat bran, flax seed, oat bran, baking powder and salt in a bowl.
- Peel the oranges, remove any seeds, and cut the oranges into small pieces.
- Mix oranges with milk, brown sugar, canola oil, eggs and baking soda in separate bowl. All ingredients must be well blended. (This step is much easier if you have a mixer or food processor.)
- Pour the orange mixture into the bowl with the dry ingredients and stir well.
- Stir in the raisings.
- Place the flax seed muffin batter in the muffin tin and bake until ready. This will usually take around 18-20 minutes. You can use the toothpick test if you are unsure.
